Can the 8979 record a run if the laptop is left attached? I see the digital7 programmable shows you can record history and was wondering if I can do the same with the 8979 controller?

No, only the MSD Digital 7 Programmable Plus, PN 7531 and PN 75314 has data recording capabilities.
